December Supply Chain Update

Our distributors' latest updates on the produce market indicate there are still limited supplies of select produce. The good new is that CKC is not having to substitute anything right now. We're grateful our distributors worked with us to provide acceptable alternatives during produce shortages, assuring our meals remained in compliance with USDA meal patterns.

Lettuce: The winter growing markets are now filling the demand for iceberg lettuce.  Expect minor quality issues such as brown stalk and moisture in bags. Spring mix supplies are low due to cold weather slowing the growth in winter growing regions as well as increased demand due to shortages of iceberg and romaine.

Roma Tomatoes and Green Beans are also expected to be in short supply into January.

Strawberries: Supplies continue to fall short of demand. There are currently white shoulders, smaller size berries, and short shelf life on all berries. Prices continue to be high, and supplies are expected to be short well into the beginning of the year.

“Menu planning, reporting, food safety issues, record keeping – it was really the equivalent of a full-time position. I’d say we save a minimum of 40 hours a week using CKC.”
